Today's simmer pot: Fall Fest

Today's simmer pot is simple, yet inspired. Fall Fest is a combination of Chamomile sprigs, All Spice, a swirl of Honey, and 1/2 tsp of Vanilla extract.
I would love to have actual Vanilla Bean to put into this simmer pot, but my local grocery store doesn't carry it. They also don't carry Rosemary. It's disappointing. I'm outraged.
So I'm in Texas. Southeast Texas. It's hot and it's muggy and it's rainy and the mosquitoes are an innumerable army of vicious monsters that will fly away with you or suck you bone dry.
I'M READY FOR FALL.
I am ready to be able to open my doors and air out this house. I'm ready for the bugs to go back to hell where they belong. I'm ready to wear my favorite fall shirt (it's super cute. just wait.) I'm ready for bonfires and halloween and pumpkin everything. Now, don't get too excited, I'm not one of those fall fanatics that posts stuff about it every 20 seconds, and my FAVORITE season is spring. But I do love fall.
My favorite thing about fall is the smell. The air is fresher and cooler, the leaves are falling and being consumed by the earth. The smell of fall is earthy and sweet and refreshing to me. Summer just smells like sweat and bugs and anger around here. It's just awful.
So with Fall Fest I wanted to capture the smells of fall, most especially the smells of the Christmas in the Park festival that my town hosts annually.
"Sometimes a certain smell can take me back to when I was young. How come I'm never able to identify where it's coming from? I'd make a candle out of it if I ever found it, try to sell it, never sell out of it, I'd probably only sell one. It'd be to my brother..."
BUT NOW WE'RE STRESSED OUT!!

But yes, the point is I captured the smell of Christmas in the Park and made a simmer pot recipe out of it. You're welcome, Kirbyvillians.
